This Blanc de Noirs comes exclusively from Pinots Noirs classified as 100% Grand Cru, picked and selected in 2012 in Aÿ.
The plot chosen covers 1 ha, facing south. It offers sun-drenched fruits, fully revealing the character of Pinot Noir Grand Cru d'Aÿ: rich, elegant, tender and powerful.
Dosed at 8 g/l of sugar, this Grand Cru Aÿ 2012 has benefited from aging for 6 years in the century-old chalk cellars of the House.
2012: harmonious vintage. The weather had however made us fear the worst that year. Despite the presence of mildew in the spring, beautiful summer sunshine allowed slow ripening and a concentration of berries, resulting in a late harvest. The grapes were very qualitative: rich in sugar with a nice acidity.

A little history :

In 1911, the Champagne Revolt broke out and 6,000 winegrowers came together to guarantee the origin of Champagne grapes in the production of champagne. The village of Aÿ takes part in the revolt and the seats of the suspects are set on fire, thus becoming a symbol of this social movement. More than 40,000 troops are dispatched to the region by the government to contain the riots. On February 11, 1911, a first law was ratified imposing the mention "Wines originating from Champagne Viticole" on the label, gradually leading and thanks to several successive laws, to the delimitation of the AOC Champagne zone in 1936.
From this association between winegrowers for the recognition of their terroir, was born in 1921 the oldest Union of Champagne producers at the origin of Champagne Collet, which today sits in the heart of the Grand Cru village of Aÿ.

Only 5 minutes from Epernay and 30 minutes from Reims, on the slopes of the Aÿ vineyard listed as a UNESCO World Heritage Site, in the middle of vines classified as 100% grand cru, the city of Champagne opens its doors to you. The Villa Collet aims to offer visitors a cultural and artistic journey to the heart of the 1920s and the Arts Déco. More than a museum, it aims to evoke an era, an art of living, a state of mind. Here, champagne and the arts are closely linked. It is a polymorphous and rich space, at the same time historical, cultural, artistic and events. By giving carte blanche to contemporary artists, the first floor offers an artistic look at the themes linked to the universe of Champagne Collet and puts into perspective the evolution of its symbols through the century.
