Fresh tuna tartare with maracuja, basil, Black Cane de Boulogne

Here is a starter full of freshness with a touch of exoticism. Quick and easy to prepare, it pairs wonderfully with the tropical fruit flavors of Guadeloupe's Black Cane de Bologna white rum.

Ingredients for 2 people:

• 250 g of fresh tuna
• 1 very ripe maracuja (passion fruit)
• 4 fresh basil leaves
• 1 small shallot
• 2 tablespoons of olive oil
• fleur de sel
• ground pepper

Progress:

Dice the tuna and set aside.
Finely chop the shallot and basil.
Take the maracuja pulp.
Mix all ingredients together.
Season with salt and pepper.
Refrigerate for 30 mins. before tasting.

Bologna is the only distillery in Guadeloupe continuing to cultivate black cane. This variety, now overlooked by distillers because of its low yield, has exceptional aromatic potential. It expresses a "concentrate" of cane which is used today in the blends of all Bologna rums.
Harvesting is done by hand on sunny days. Upon extraction, the juices already possess more powerful and delicate tropical fruit aromas than any other variety of cane.
In addition to this aromatic signature, Bologna applies a very precise low-temperature distillation style, thanks to its Creole copper column called "Savalle" from 1965.
The Bologna distillery is the oldest in Guadeloupe. It is set on a three-century-old cane plantation that stretches from the slopes of the Soufrière volcano to the Caribbean Sea. Heir to this long tradition, the Sargenton-Callard family has remained faithful to the craftsmanship of Bologna and has always sought to sublimate the expression of the terroir and the cane. With black cane, Bologna specializes in the production of exceptional agricultural white rums. The domain concentrates on more than 150 hectares the most beautiful terroirs of the island. Since 2010, Bologna has been committed to an eco-responsible process and launched the first organic rum from Guadeloupe in 2020.
