Optimus de Lastours, an "orange" wine

Located between the Mediterranean Sea and the Corbières massif, the Château de Lastours consists of a 100 ha vineyard and a 10 ha olive grove, nestled in the heart of an 850 ha garrigue setting. Engaged for many years to an environmental approach of wine growing, the estate has been certified organic (AB) since the 2020 vintage.

The Optimus cuvée is inspired by the ancestral Georgian tradition of macerated white wines. This wine comes from a selection of the best Roussannes of the estate, from the Les Escareilles plot. The vines are over fifty years old and produce grapes with a rare balance. The bunches are harvested manually and the wine is made using a particular vinification method for a white wine: maceration. This maceration contributes to the stability of the wine allowing limited use of sulphites. After running off, the wine is placed in a sandstone amphora and aged in this container for a year.
