Soft-boiled egg with greens, gratinated with parmesan

Chef Arnaud Baptiste imagines three exclusive recipes for the European egg.

Recipe for 4 people

Ingredients :
- 7 eggs
- 120 gr arugula
- 50 gr parmesan powder
- 50 gr parmesan shavings
- 1 tablespoon Savora Mustard ©
- 20 cl grapeseed oil
- 30 gr fine breadcrumbs

Recipe sequence:
- Make mayonnaise by mixing the 3 eggs, Savora mustard and grapeseed oil.
- Immerse 100 g of arugula in boiling, well-salted water, cook for 4-5 minutes, then cool well in iced water.
- Then mix using a food processor to obtain a smooth, creamy puree.
- Mix part of the mayonnaise and the arugula puree to obtain a very green mayonnaise.
- Cook the eggs in boiling water for 5 minutes to obtain soft-boiled eggs.
- Mix the parmesan powder and breadcrumbs.

Dressage:
- Dress the soft-boiled egg and coat it with green mayonnaise.
- Finish with breadcrumbs, previously burned with a blowtorch and fresh parmesan shavings.
