Langoustine tacos

Succulent and refined, Scottish langoustines reveal all the richness of the cold, crystal clear waters in which they evolve.

For 4 people

Ingredients :
• 8 Scottish langoustines

Homemade tacos
• 35 g of sourdough
• 10 ml of olive oil
• 25 ml of water
• 65 g of flour
• 1 spoon of salt
• 1/2 spoon of yeast

or 8 tortillas

Basil aioli
• 35 g of basil
• 85 ml of vegetable oil
• 1 egg yolk
• 1/2 spoon of Dijon mustard
• 1/2 spoon of white wine vinegar
• 1/2 clove of confit garlic

Pickles
•    125 ml vinaigre de vin blanc
•    40 ml vinaigre de cidre
•    50 ml d’eau
•    85 g de sucre semoule
•    1/2 badiane
•    1 gousse d’ail
•    1/2 bâton de cannelle
•    2 g de graines de fenouil
•    1/2 orange découpée
•    1 petite laitue, râpée
•    4 radis, finement découpés
•    1 oignon rouge

Preparation: 
Place the langoustines in the freezer for 30 minutes. Pierce each langoustine between the eyes using a knife. Blanch them in a pan of boiling salted water for 10 seconds before plunging them into ice water. Remove the heads and shells, then thread the flesh onto the skewers.
In a bowl, mix all the ingredients for the tortillas and knead for 10 minutes until you obtain a smooth and elastic dough. Place in an oiled bowl, cover and let rest for 1 hour. Divide the dough into 8 balls and roll them out to form the tortillas. Cook for 1 minute on each side in a hot pan.
For the pickles, simmer all the ingredients for 5 minutes in a saucepan. Cover and let cool, then mix 50 ml of juice with 50 ml of cold water. Add the chopped onion and let it infuse for 10 minutes before draining.
Mix the basil with the vegetable oil. Mix the rest of the ingredients and slowly pour in the basil oil until you obtain an emulsion.
Brown the langoustine skewers. Once cooked, let them rest and remove the skewers. Garnish each tortilla with the basil aioli, a few pickles and a langoustine.
