Thai mango and peanut salad

Ingredients for 2 to 3 people:

1 carrot
1 courgette
¼ red cabbage
1 mango
1 green onion
100 g Natur' & Bon de Vico roasted peanuts a
few sprigs of mint

For the sauce:

1 squeezed lime
2 tablespoons salted soy sauce
1 teaspoon agave syrup or honey
2 tablespoons sesame oil

 

Preperation :

Wash and peel the carrot and zucchini with a julienne peeler or a special spaghetti vegetable cutter.
Peel and cut the mango into thin slices. Thinly slice or grate the red cabbage. Chop the green onion and the mint.
Mix everything in a salad bowl then add the previously prepared sauce, mixing all the ingredients well.
Mix and serve with crushed peanuts Natur' & Bon de Vico and a few sprigs of fresh mint.
