Fliergerhorst - The taste buds take off

Finished the holidays ? Then head for the Eschbach airfield in the Markgräfler Land. There, with a breathtaking view of small planes taking off as well as a small collection of historic planes, chef Hervé Grosjean offers convivial cuisine.

The place is steeped in history. Adjoining the small hangar that houses a few historic planes (but all in flying condition), the “Fliegerhorst” welcomes customers for lunch or dinner in a setting that invites them to escape.
A successful bet for the architect: with its art deco style, the brand new restaurant fits perfectly into the rather industrial landscape.

By pushing the door, the decor sets the tone: a few rare collector's items like this old car, create a somewhat nostalgic atmosphere.

Opposite, the bar acts like a magnet with its brick wall, its dark woodwork, its crests of former squadrons. The bay window overlooks the small airfield directly. Sometimes pilots come to check the weather forecast. It's hard to resist the attraction of the leather armchairs to observe the activity on the ground while enjoying a small drink...

But it's dinner time. Head upstairs to a more modern decor but just as pleasant. The windows overlook the landing meadow, the Kaiserstuhl, the Vosges.

From the tables along the passageway, the gaze plunges into the hall with its collection "coucous". All the tables surround a large open kitchen where the brigade managed by the French chef Hervé Grosjean is busy. Leader. Francais, after years of training in several establishments in his native country, was the "culinary" manager of the major events organized at the Freiburg exhibition center. Large crowds or the reception of groups therefore does not scare him.

Friendliness and openness

His leitmotiv for managing his team: “In the kitchen, there is no question of hierarchy. We are a team. If the cooks are a bit under the spotlight, Heike Grosjean, the facetious wife of the chef, prefers to work out of sight to make breads and cakes. "We don't want to go to the stars, but to offer a friendly cuisine, open to the world, which allows everyone to find what they are looking for while having a good time. »

It is in this spirit of openness and conviviality that a calf's head salad rubs shoulders with a sea bass on a bed of coconut with a pinot noir sauce or even a turbo with its seafood risotto. week, wines by the glass allow you to discover the winegrowers of the region. At noon, a small card allows you to have lunch quickly. In the evening, the dishes à la carte or the menu encourage you to take your time (€37 without wine or €45 with 2 glasses of wine)

Maxi's burger

The menu changes regularly, depending on the season with some classics such as the Charolais tartare, the 400 gr rib eye, the granny's casserole or the special Maxi burger, according to the owner of the place. Businessman Maxi Gainza had the idea (and the dream) of reviving a restaurant on this site where the "Eule" inn (the owl, after the name of the squadron which was based in Bremgarten).
It took three years and an investment of nearly 3 million euros to create this place that invites you to escape.

The venerable coal cooker on the landing? It's that of Horst Lichter, a highly publicized cook in Germany, godfather and “good gastronomic spirit” of the place. I forgot: a surprise awaits the gentlemen in the... toilets!
