Duck breast burger

Ingredients for 2 people

  • 1 duck breast of about 400 g
    100g red cabbage
    1 slice of thin smoked bacon
    1 red onion
    2 tablespoons red wine mustard
    4 to 5 fresh figs
    1 good handful of arugula
    2 burger buns
    1 teaspoon of sugar
    A few sprigs of rosemary, salt and pepper of pink berries

Start by cutting the red cabbage into very thin slices. Place it in a salad bowl and salt generously. Massage the cabbage and salt until it softens and loses a little water. Let stand.

Take the duck breast out of the fridge. Trim and save the fat. Let the duck breast come to room temperature.

In a very hot pan, roast the bacon and the cabbage, season with pepper and add a small glass of water. Let cook covered for 10 minutes. Remove the bacon and keep it for another use.

In addition, peel and cut the onion into rings and roast it with a piece of fat from the duck breast. When the onion is just browned, remove the fat and continue cooking for another 3 minutes, adding a teaspoon of sugar.

Wash and dry the arugula. Cut the figs into slices. Cut the duck breast into small cubes using a sharp knife. Add salt and pepper. Add a few sprigs of rosemary. Form two balls and crush them (you can use baking circles if you have them) so as to obtain two beautiful circles about 1.5 cm thick.

Grill the burger buns. Sear the meat in a hot skillet without fat. Turn over after 3 minutes and continue cooking for another 3 minutes. Cut the fire.

Spread the breads with mustard, add a little cabbage confit, arugula leaves, grilled onion rings and fig slices. Place the circles of ground duck then repeat the operation until supplies are exhausted. It's ready!

Produced from vines adjoining the historic plot of the estate Courbis, this IGP Collines Rhodaniennes cuvée has all the advantages of its big brother Saint-Joseph Les Royes … but at IGP prices.

Fruit and crunch but also, already, the elegance and fullness that its exceptional terroir gives it. The smoky and roasted coffee aromas open on notes of red and black fruits (blackcurrant), supported by spicy flavors.

The Syrah that make up L'Aube are 10 years old (50%) and 20 to 30 years old (50%). They flourish on very steep slopes, composed of 80% granite and 20% limestone, sheltered from the north winds.

The harvest is manual and completely destemmed. The wine is aged in barrels of 4 to 5 wines for 10 months.
