Sweet potato & curry pie

For 4 to 6 people
Preparation: 15 min
Cooking: 50 min

Ingredients :

• 500 g peeled sweet potato
• 1 shortcrust pastry
• 2 tbsp. coffee curry
• 200 g bacon bits
• 1 onion, minced
• 3 eggs
• 20 cl liquid cream
• Salt

Progress:

1. In a pan, sweat the bacon bits. Add the onion and cook for 5 mins.
2. Grate the sweet potato (or cut it into thin slices using a mandolin). Mix it with the onion and the bacon.
3. Preheat the oven to 180°C. Darken the dough in a pie mold and distribute the previous preparation in the bottom.
4. Beat the eggs into an omelet. Add the cream, curry, salt and pepper. Pour the mixture over the filling. Bake for around 40 mins.
