Clear and shiny pale gold.

Nose :
Subtle, fruity apricot and floral notes with delicate jasmine. After oxygenation, a beautiful harmony is revealed between the fruity and delicate woody side.

Mouth :
Tense with a nice attack that brings energy. The whole is juicy and greedy with notes of citrus zest that give character. The final, powerful and long reveals a beautiful expression of the terroir.

Wine pairing :
Crustaceans, shellfish, fish, white meat, poultry.

Located in the heart of the Grands Crus, at the foot of the Grenouilles hillside, the Château Grenouilles estate is an exceptional and unique ensemble in Chablis. This estate of 7.20 hectares in one piece, magnificently exposed to the south-west facing the village, between Vaudésir and Valmur, produces the rarest of Chablis Grand Cru: the Grenouilles. It comes from small selected plots of old vines (40 years old) with Kimmeridgian clay-limestone soil and subsoil.

The musts undergo cold static settling before starting fermentation. Fermentation, alcoholic then malolactic, takes place in barrels and in vats.

The wine is aged for around 14 months on fine lees, in barrels and in vats.

 

Located only on the right bank of the river Serein, in Chablis, the Chablis Grand Crus form a complete set of 104 hectares delimited by hillsides, the famous "hill of the Grands Crus", facing mainly south-west. These are wines with a strong personality that time continues to magnify. Five to ten years minimum are necessary for them to begin to reveal themselves and their aging capacity is remarkable. There are seven Grands Crus: Blanchot, Bougros, Les Clos, Grenouilles, Les Preuses, Valmur and Vaudésir.

Halfway between Paris and Beaune, Chablis opens the golden door of Burgundy wine. The 6800 hectare vineyard, spread out on both sides of the “Le Serein” river, extends over 20 municipalities. Thecooparative winery La Chablisienne is present on the whole vineyard and appellations of Chablisien, it alone represents nearly 25% of the vineyard.

The story of La Chablisienne began in 1923. Under the leadership of Father Balitrand, a few winegrowers joined forces to deal with economic difficulties. Until the mid-1950s, they brought their wine production to the cooperative cellar where the blends were made. The wines are sold mainly through the wholesale trade. For better quality, La Chablisienne decides to bring in the harvests in the form of musts in order to control the entire winemaking process. The winegrowers ensure the pressing as close as possible to the vines before La Chablisienne takes over.
